Pizza Margherita

The Pizza Margherita is the pizza that built our reputation, and it is the one we test every single morning before the ovens open. A thin, hand-stretched base that turns crisp at the edges and stays soft in the middle, a slow-cooked San Marzano tomato sauce, and a generous layer of creamy buffalo mozzarella. That is it. Three ingredients, handled properly, and baked on stone at high heat so the cheese bubbles and the crust blisters.

We make the dough fresh every day in our kitchen at Hessenring 14A, Büttelborn, and we do not cut corners on the toppings. The tomatoes are peeled and crushed in-house, the mozzarella is delivered fresh each morning, and a handful of basil leaves goes on only after the pizza leaves the oven, so the aroma stays bright.

Our kitchen runs late, and we deliver until 2:00 AM, so whether it is an early dinner or a late-night craving, the oven is still on.
